SAVORY STUFFED CREPES RECIPE + $100 GIVEAWAY
I‘ve been channeling my inner Julia Child a bit lately. It was probably triggered by the latest package I received from Kraft; it was packed to the brim with an assortment of Kraft Natural Shredded Cheese.
First, I made my famous grilled cheese (famous in our tri-block neighborhood, at least). Then I got caught up in a project with my wife preparing a recipe called Upside Down Mac & Cheese. My cooking has resulted in this dish before, but this was the first time that it wasn’t the result of a clumsy kitchen mishap.
Most recently I decided to tackle one of the popular recipes from the Kraft recipe site, Savory Stuffed Crepes. While I’ve enjoyed crepes on many occasions, this was my first try at making them myself–luckily the site provided simple instructions for me to follow.
My only difficulty came when I got to the part that required 16 egg whites—my eggs all had yolks. I tried separating them, but after three attempts I still didn’t have any egg whites and I was rapidly running out of eggs. Being the tech-savvy, solutions-oriented person that I am however, I turned to the interwebz and found a solution. In fact, I found two easier ways to separate egg whites. The first involved using my hands, and the second made use of a water bottle. Within minutes I was back on track.
The recipe next called for an 8-inch heavy skillet. Having never made crepes before, I wanted to be precise. I pulled three frying pans from the cupboard and grabbed a tape measure. The first skillet was too small. The next skillet was too large. Hoping for the luck of Goldilocks, I measured the last skillet—but it was too large as well. As uncomfortable as it was for me to go off-recipe, I improvised and used what appeared to be a 6-inch skillet.
I successfully poured 1/4 cup of batter into the skillet and tilted it so the entire bottom was covered with batter. It cooked for a minute or so, but when I went to flip it my spatula was too big (or rather, the pan was too small). Worried that I would burn it if I let it cook any longer, I grabbed a plate, picked up the pan, and turned it so the half-baked crepe dropped onto the plate. I then easily slid the now-flipped crepe from the plate back into the pan and cooked the other side. Against all odds, all 8 crepes survived my flipping and flopping technique.
All that remained was to cook the egg whites and add the mushrooms, both of which I completed without incident. The recipe called for Kraft Shredded Three Cheese with a Touch of Philadelphia both inside and on top of the crepes. Ever the overachiever, and inspired by Nigel Tufnel in This Is Spinal Tap, I substituted with the Kraft Shredded Mexican Four Cheese with a Touch of Philadelphia because, well, four cheese is better three cheese, right?
As a final flourish I added some bacon. I stuffed the crepes with cheese, mushrooms, green onions, and eggs; put them all in a baking dish and covered with even more cheese; and let it bake for 5 minutes until the cheese was melted.
The recipe was a delicious success. Of the three meals I prepared this week using Kraft Natural Shredded Cheese with a Touch of Philadelphia, this was the favorite. Each dish was filled with creamy cheesy flavor, and all three will be made and enjoyed again.
